Mountain Water Process is a natural decaffeination process. The coffees are from South Minas, Cerado and Mates Minas and are naturally process, which typically produces a brighter and more complex flavor than washed coffees. "Natural process" means the whole beans are dried under the sun and then de-pulped to reveal the green bean, the decaffeination follows.
